is it difficult to put shoes on with the gripper socks

If the laces are not loosened up first then yes it is difficult getting "dress or nice" shoes on, but not that difficult with sneakers.

Can't see the bottom of the socks, what do the grippers look like, and what is their purpose?

The grippers on the bottom of the sock run as squiggly lines on the sole of the socks and provide a non-slip/non-skid bottom for walking on slick surfaces such as hardwood floors.
